Theon is a great example of this. He was a pretty well established character that they had to do something with last season, so they introduced the "reek" plot line early (well, not really...but you know what I mean). You can't just "main" characters sit out for a season and then pop up next season with out much explanation. We have a show like that already, it's call The Walking Dead, Right T-Dawg?

Martin's story in book form is crazy long. Word count wise, it's 1.314 million words. To put that into perspective It's longer than The Dark Tower Series, almost triple the word count of LoTR and it's STILL BEING WRITTEN. Holy crap. So for TV, yes it needed a good editor for the overall story to work. As long as they continue to hit the high points and get the overall feel/theme/story correct - meh, so be it.
I understand everything you're saying but I also know the writers are concerned that they will outrun George Martin as this is season 4 and there are 5 books in print, so I think they could afford to slow things down a bit.

Also, Strong Belwas. Of all characters they have to cut out the one who takes a huge dump on a dude after he kills him, as well as eats 10 portions of honeyed locusts. Heresy I say!!!

GRRMartin has agreed to allow two assistant writers help him pick up the pace and stay ahead of HBO. He is providing outlines and major plot points/story arcs, but letting these other guys do the time consuming work of describing scenes and character dialog. I hope and trust that these two assistants are talented in their own right, and able to emulate the style and pacing we're used to. But at least he should have the next book done in less than nine years.

    Edit: Also, Strong Belwas.

I think Locke is going to be the thing that happens to Jon at the end of book 5!

Where did you hear that about the assistant writters? I used to almost daily read his blogs and stuff, but I don't have time to anymore so it's been awhile and I'm out of date on the news. I'm really surprised (and somewhat sadened) to hear that though, if true.

EDIT: A google search only turns up one hint of this, and it is noted that it was an April Fool's joke. I have a hard time believing this to be anything other than that honestly ... George will finish his books.

We are on season 4, but not book 4. This is still the second half of book 3 for this season that we are dealing with.

Martin will become a Wheel of Time thing. No way he will get all the books done. Do not forget that back in the day he promised 12 books, which has promptly denied with all the arty choked goodness he can muster. Man just bounced around too much, unlike other writers of his time that understood how to do a project and finish it end to end.
