Apparently this season won't build towards a single climactic event in eps 9 like the last three seasons did. Instead there will be multiple smaller builds and climaxes as the season goes along. That would make sense if they were combining the events of more than one book.

The next couple of seasons will combine books 4 & 5 because of the parralell timelines of book 4 with the first half of book 5. However this particular season is just the second half of book 3, so that doesn't really play into it here. As far as Dontos, he is important to this part of the story, but really he should have already been involved by the second half of last season, they have delayed him so I think he is going to be really minimized. The next episode (possibly crossing two episodes) will be covering the wedding, and so Dontos at least massively changed, if not nearly totally minimized, because there should have been alot of him before now at this point.
Both weddings happened at the end of book 3 so not really the "second half". With limited screen time and what i imagine they are going to do with Ser Dontos, it will be just fine. His role is important but doesn't need to be as involved as it was in the book. I mean honestly, those scenes in the book could of been accomplished in half the book space it used.

It's been awhile since I read it, but I have re-read the series with every new book written, and I started at the begining. If I'm not mistaken the wedding happens MAYBE 2/3 of the way into the book (which since season 3-4 are both the book, is not far from where we are), because there is alot that happens to Tyrion and other characters in the wake of the wedding, not to mention the chapters taking place in other parts of the realms.
The red wedding yes, that is about right. The other one is most certainly near the end of the book because you get sort of a cliff hanger with sansa and tyrion.
